Saint-Rémy-de-Provence Restaurants Open in Winter: Your 2026–27 Guide

October 8, 2026

Where do you book a serious dinner in Saint-Rémy-de-Provence on a Sunday in mid-November? This winter the answer is a specific table on a specific night, and the calendar behind it is more deliberate than it looks.

The town now has two gastronomic dining rooms whose winter schedules fit together closely. Put their published dates side by side and the old idea of a dead season falls away. What is left is a narrower and more useful fact: the gaps fall on Tuesday and Wednesday nights, plus one week at the end of February.

The Chef Who Chose to Stay

The new piece of the calendar is Le Sylvestre at the Mas de l'Amarine, 517 ancienne voie Aurelia. Michelin lists it as "Nouveau," cooking creative food in its top price band. Its chef-owner, Sylvestre Wahid, is known in the Alpilles from his years at the Oustau de Baumanière. La Provence credits his arrival there about twenty years ago with earning the restaurant two Michelin stars, and he went on to win two stars again at Strato and at Sylvestre in Courchevel and at Thoumieux in Paris.

He bought the Amarine. The restaurant opened in early May 2026. Asked about his plans for the house in September, he answered in operating terms:

"What drives us is keeping this house alive all year round, except in January and February. Our idea is to create habits, while regularly bringing something new."

"Create habits" is a phrase aimed at the people who will still be in Saint-Rémy in November. A destination table that relies on summer visitors doesn't need habits. It only needs bookings. Treat the year-round promise as the owner's stated plan, though. The house has not published a night-by-night calendar for 2026–27.

The price ladder shows where it sits. The September menu offers three tasting menus at €195 for "Inspiration entre Alpes et Alpilles," €295 for "Découverte," and €350 for "Signature SW," plus à la carte mains at €120. The house has five guest rooms, according to its own site.

Two Calendars, Staggered

The other gastronomic room in town is ORIA at the Vallon de Valrugues, where Alexandre Fabris cooks. Its menus cost €115 for vegetarian, €145 for the five-course Escapade en terre Provençale and €195 for the nine-course version. ORIA's longest menu costs the same as Le Sylvestre's shortest. The two rooms meet at €195 and price out in opposite directions from there.

ORIA has published its closures for this winter. It is shut from Tuesday, November 3, through Wednesday, November 25, 2026, and again from Tuesday, February 23, through Wednesday, March 10, 2027, both inclusive. Here is how ORIA's dates line up with Le Sylvestre's stated plan, month by month:

  • October: both rooms open.
  • November 3 to 25: ORIA closed. Le Sylvestre is the gastronomic option in town.
  • Late November through December: both rooms open.
  • January and February: Le Sylvestre plans to close. ORIA carries the season on its winter schedule.
  • February 23 to 28: both rooms dark.
  • March 1 to 10: ORIA still closed. Le Sylvestre has not announced a reopening date.

Taken together, a gastronomic dinner is available in Saint-Rémy in every month of the coming winter. The one full stretch with neither room open is the last week of February, and it may run into early March depending on when the Amarine reopens.

The Week, Night by Night

The monthly picture hides the weekly one, and the weekly one matters more for actually booking a table. In winter ORIA serves dinner Thursday through Saturday only. In summer it serves Tuesday through Saturday. Michelin's current listing for Le Sylvestre shows dinner from 19:30 to 22:30 on Friday, Saturday, Sunday and Monday, with Tuesday through Thursday closed. Those are the hours in effect now. The house could change them in winter.

Night Le Sylvestre ORIA, winter schedule Bistro dinners open
Monday Open Closed Canto Cigalo, Bistrot de l'Aupiho
Tuesday Closed Closed Canto Cigalo, Bistrot de l'Aupiho
Wednesday Closed Closed Canto Cigalo, Bistrot de l'Aupiho, Bistrot du Brau
Thursday Closed Open Canto Cigalo, Bistrot de l'Aupiho, Bistrot du Brau
Friday Open Open Canto Cigalo, Bistrot de l'Aupiho, Bistrot du Brau
Saturday Open Open Canto Cigalo, Bistrot de l'Aupiho, Bistrot du Brau
Sunday Open Closed Canto Cigalo, Bistrot de l'Aupiho

ORIA covers Thursday and Le Sylvestre covers Sunday and Monday, so on five nights out of seven one of the two gastronomic rooms is open. Fridays and Saturdays have both. Tuesday and Wednesday have neither, so the midweek evening falls to the bistros.

Midweek Belongs to the Bistros

The Vallon de Valrugues keeps a table open even while ORIA is shut. Its second dining room, Bistrot Canto Cigalo, advertises service "365 days a year, 7 days a week," lunch and dinner, with a menu that changes with the seasons. Michelin added it to the Guide in September 2026. The inspector's note mentions Alpilles lamb shoulder confit with fresh herbs, sea bass a la plancha with sauce vierge, and wild sea bream supplied by small-scale fishermen. The note also says the menu is fuller at dinner than at lunch.

The bistro's weekly rhythm covers the gap in the table above. The chef's specialties, including aïoli, daube provençale, grilled langoustines and bouillabaisse, are served every Wednesday, Friday and Sunday, and Friday evenings have live music. That makes Wednesday, the emptiest gastronomic night of the week, a bouillabaisse night in Saint-Rémy. Over the holidays the bistro runs a Christmas tea time around its Christmas cabin, set menus on December 24 and 25, and a New Year's Eve réveillon on December 31.

At Domaine de Manville, the bistro of L'Aupiho describes itself as serving guests "été comme hiver," summer and winter alike. It is open every day from 12:00 to 14:00 and 19:00 to 21:15, with lunch starting at €40. Lieven van Aken runs the kitchen, cooking a seasonal menu with produce from the Domaine's agroecological farm. Pastry chef Martin Leroy-Terquem makes the desserts. The Domaine is also advertising winter stays from October 17, 2026, to March 12, 2027, so the property expects guests right through the season.

In Eygalières, Le Bistrot du Brau at La Bastide serves a bistro menu signed by starred chef Christopher Hache. It is open for lunch and dinner Wednesday through Saturday and for lunch on Sunday. In winter, service moves to an indoor dining room and a private salon with a fireplace. Wednesday through Saturday makes the Brau one more midweek dinner on the Wednesday that both gastronomic rooms skip.

Wednesday mornings are already covered. The Alpilles en Provence tourism office lists Saint-Rémy's Wednesday market as running all year, 8:00 to 13:00, though bullfighting events can postpone or cancel it.

Lining Up October

Several fixed dates this month fall on nights when a gastronomic room is open. At the Alpilium, the 2026–27 season begins with Tu connais la chanson ? on Thursday, October 8, Mendelssohn's Passion on Saturday, October 17, and Failles on Thursday, October 22. Both Thursdays fall on ORIA nights, and the Saturday has both rooms open, as long as ORIA has moved to its winter schedule by then. Its site does not say when the switch happens.

That same weekend, Glanum hosts Monument Jeu d'enfant on October 17 and 18. Families can help build a large model of a Roman domus. Admission is free for EU residents under 26 and €9 for everyone else. ORIA's November break starts soon after. On Tuesday, November 3, the gastronomic option in town narrows to the Amarine for three weeks.

Keeping track of which table is open which night, and which plans are confirmed and which are only stated intentions, is the kind of local detail we follow for clients who live in the Alpilles for more of the year than the summer season.
